Chicken Tortilla Soup


Ingredients:

  • Six (6) large vine tomatoes
  • One (1) bunch of cilantro
  • One (1) sweet onion
  • Two (2) jalapenos
  • Two (2) serrano peppers
  • 1.5 - 2 lbs. of shredded chicken
  • Two (2) large avocados
  • One (1) can of black beans
  • Two (2) cups of white rice
  • Three (3) 48 oz. chicken broth boxes
  • 1/2 Cup of olive oil
  • 1 TBSP of minced garlic
  • 1 Bag of Tortilla Chips
  • Sour cream
  • Shredded cheese

Cooking instructions:

  • Blend all the vegetable in a mixer to create salsa (except 1/3 of the sweet onion, minced garlic, avocados and black beans)
  • Pour 1/2 Cup of olive oil into stock pot and heat
  • Cook 1/3 chopped sweet onion in olive oil for seven (7) minutes
  • Cook 1 TBSP of minced garlic in olive oil for three (3) minutes
  • Add chicken broth
  • Add salsa
  • Add chicken
  • Boil combined ingredients to a boil
  • Cut avocados into cubes
  • Spoon soup into bowl with optional black beans, white rice, avocado, cheese and sour cream
